    Fermentation ?

As newguy said, give it a day or 2 then shake fermenter real good if you still have no activity. Sometimes yeast takes longer than expected to get going

    Rack to secondary?

I agree with lorenae. Some fermentations can be completed in 24-48 hours, but best to check gravity for 3-4 days in a row. If its the same, go ahead and rack

    Another incompitant newbie

If you are using a plastic bucket fermenter, try to find a strainer large enough to fit across the bucket. It will help keep some of the hops, etc. out and also helps some with aeration. Just my $.02

    giving this a shot

If it comes out too dry you can add potassium sorbate to inhibit further yeast activity, then add table sugar to taste

    K Meta?

This is a yeast inhibitor, just as potassium sorbate. Prevents further yeast activity after bottling, reducing the chances of "bottle bombs". I use K-sorbate in all my meads and ciders

    how to calculate ABV??

Take a reading of your original gravity (O.G.) BEFORE adding yeast. Then take a reading of your final gravity (F.G.) at the end of fermentation. The difference is the alcohol content. Make sure fermentation is complete by taking readings for 3 or 4 days in a row. If it is at or close to your...

    Alcohol-HOW!?

Yeast attenuation levels can also make a difference. Attenuation is the amount of sugars the yeast will convert to alcohol. A low attenuation yeast will leave more sugars, making the beer sweeter, heavier, and more full bodied. Higher attenuation yeast will ferment more fully, making for a drier...

New to the brew: Need help

If you are racking back into the primary fermenter it needs to have the sediment rinsed out. As with beer, leaving on the yeast sediment too long will contribute off flavors to your cider. If making carbonated cider, I wouldnt add the 3 lbs brown sugar. 5 gal of fresh juice will make about a 5%...

    Bottling / Secondary ?'s

If it still has a strong smell it may still be fermenting. Check gravity for 3-4 days in a row. If there is no change its done. In order to sweeten you must first add a yeast inhibitor such as potassium sorbate. You can then use table sugar and sweeten to taste, may take up to 2 or 3 pounds if...

New to the brew: Need help

Making cider is easy. There are 2 kinds, sparkling (carbonated) and still (like wine). Any online homebrew supplier can get you the yeast, fermenters, etc. to make your own cider. Beer beer & more beer has a nice site and is a supplier. My local shop is The Home Brewery in Ozark, MO. Their site...

    Where can I buy LME?

The Home Brewery in Ozark MO has LME, as well as William's Brewing in CA. I agree with the others, DME is much better for me, but if you are happy with the syrup, use it
