    reheating fermented wort to kill possible infection?

    Ive had this "skin" form on several batches. It has always clung to the walls of the carboy/bucket while racking before bottling, with no effect on clarity or taste in the bottle. Not sure what it is or how or why it forms, but no ill effects so far

    Palmers book should have instructions on hydrometer use. If not, get Papazians Complete Joy of Home Brewing. It tells about hydrometers and also has a section with various recipes that include original gravity. Its most important when checking O.G. to do so BEFORE adding yeast

    Lag times-how long too long?

    You might swirl or shake your fermenter to get the yeast back into suspension, it may have got a bit too cold and just dropped to the bottom or maybe just a lack of aeration at pitching

    Dry yeast

    Dry yeast will ferment quicker, and leaves a drier finish from what Ive noticed. Not necessarily more or less alcohol, but sometimes the quicker fermentation will result in higher temps, which can cause off flavors.

    Filtering

    I use a big strainer going into primary, but some small particles still get thru. When I rack to secondary, I put the filter inside a funnel under the spigot. I then run a hose from the funnel into the secondary fermenter and keep the spigot on a slow run, keeping aeration to a minimum
