What are some things that can be done to create a nice creamy head that doesn't dissapear after a few sips. I've heard that steeping a cup of oatmeal will help. Any other suggestions?

I've heard the term "stuck fermentation" on this site a few times and was wondering what exactly is it? What are the factors that contribute to it and how can it be fixed?

So today was bottling day and what a stressful day it was. Cleaning and sanitizing 40 some bottles plus equipment, siphoning difficulty and the fact that I was doing it solo all contributed to the mayhem. However I did get to sample my flat room temperature home brew and to my delight it tastes...

I know its a no-no, but if I don't have an autosyphon handy can a syphon be carefully started with the mouth or is there just too much bacteria in the mouth to maintain sanitation?

I am about to bottle my first batch of homebrew. After I sanitize the bottles in a bucket of bleach-water, is it really that harmful to rinse them with tap water? Or should the rinsing water be boiled first as howtobrew.com suggests. I don't think Papazian's book addresses this issue and I want...
