Just letting yall know how the Imperial stout turned out in the bottles. I put 13 grams of corn sugar to just under a gallon of stout and bottled two weeks ago. Opened a bottle yesterday and it was perfect. Balanced PSSST when opened and no mount st. gusher. Thanks to those who helped. ;)

    Help with High Velocity Weizen

After almost seven weeks in the fridge I transferred the lager into a keg and sampled some of it. Holy crap was it yummy. Compared to the stouts I usually make this tasted like water. The key was time and patience. But way worth the wait. :p

    Help with High Velocity Weizen

Thank you for your suggestions. I did a little reading on lager yeast temps and it can take a couple of months for some to finish fermentation. I will be patient and slowly turn the temp to a warmer setting. It is a old full size fridge I turned into a beer fridge with a corny keg system kept...

    Help with High Velocity Weizen

This was my first time doing a beer that uses yeast that requires lower temp. I have had it in the fridge for almost four weeks and the time between air lock burps is still around 10 seconds apart. I know that lagers take longer to ferment just wandering if anyone has some suggestions. This is...

    next batch! what to try?

This hobby has attracted the attention of my best friend. Yesterday we got silly with it. We took the Goat Scrotum porter recipe from the Joy of Homebrewing. We left out the brewing licorice, spruce essence, and szechuan peppers. So we added white chocalate, three times the juniper berries...

    Priming Sugar

The co2 tank is hooked up to the kegs to dispense the beer. Usually the suggested amount of psi to pour the beer from the tap is 3-5 lbs. of co2. When you first put the beer in the keg instead of adding 1/3 cup sugar to prime which helps with natural carbonation I like to add 30-40- psi to the...

    Priming Sugar

Priming sugar is using 3/4 cup of corn sugar to 5 gal. of homebrew to be added just before bottling or 1/3 cup before kegging. Most people let this sit in the bottle for about 10 days and this will produce the wanted co2 that creates the bubbles and head. The trick is to wait the 10 days...

    100 Shilling Scotch Ale

Rhoobarb, it looks good enough to try as my next batch. I am ready to attempt some fruit experimentations. Instead of smoke can you recommend a fruit substitute or is that just plain silly with this style of beer?

How much corn sugar to bottle partial Imperial Stout

Thank you! I thought .6 ounce sounded right. I put about the amount (eye balled) of El Pisto's calculations last time and I had too much co2 in the bottles. I will try the 1/2 ounce and see how that does. Thanks again to both of you... :)

How much corn sugar to bottle partial Imperial Stout

I had a gallon extra from my original Imperial stout batch that I kegged. I want to bottle this spare gallon but last time I did this I eyeballed the cornsugar and that wasnt too smart. No exploding bottles just gushers. I mean Gushers. So what is a fifth of .75 cup of corn sugar? The...
