    Sierra Nevada is the quintecential apa I think. Classic example of this style. I'vebeen drinking a lot of widmers drifter pale ale. Dogfish shelter pale ale is on the top of my list as well.

    It is a wheat/light dme recipe with 1 oz. Mt hood and amarillo. Amarillo was added at the end of the boil with lemon zest and coriander. S-33 yeast. I will bottle and wait. Thanks for the help.

    Bottle carbing too warm

    My last batch sat at around 80 and carved up no problem in a week. That was with us-05 . I think it depends mostly on your yeasts temp threshold. I think bottles carbfaster at higher temps so I would think your closet would be best. I'm a noob so I could be wrong.

    Really? Everything I've read about S-04 says it gives you a lower FG. Guess advertising isn't always true. US-05 got my pumpkin down from 1.048 to 1.012 in 6 days.

    i just starting drinking my pumpkin pale ale that i used US-05 for. i had it fermenting in the mid 70's and it turned out great and fermented quickly. a much faster working yeast than S-33. i'll probably continue to use US-05 for a majority of my american beers. i really want to try S-04 also...
