    It's what I do. I set mine at 10# @ 40 degrees and it takes about 7-10 days. It takes patients to wait, but an over carbonated keg is hard to fix if you can.

    Old hops

    If you look around the net you can find hop age calculators, but for no more than they cost Id toss them. Even packaged correctly they loose their bittering over time. And if you add more to make up for it, you'll end up getting a grassy flavored beer. Been there done that.

    Why don't you just prime the keg with corn sugar and stick it in the cellar. That would be the easiest. If you don't like corn sugar and prefer gas then buy an extra C02 setup for the your kegs in the cellar

    Not to be negative, but I bought a keg without a lid once and will never do that again. I put a lot of time and energy and $$ into never finding the correct lid. The keg I had was pretty old. Good Luck
