    Do you happen to know rough guidelines for "how much" sulfite could/should be used? Obviously it's contingent on Acetaldehyde levels, which wouldn't be known, but I'm just curious regarding what this looks like for beer use.

    Pound-for-pound, DME also has higher extract (i.e., "sugar") than LME too as it's more concentrated. Just something to keep in mind if swapping between the two in a given recipe.

That's why a lot of the folks trying to minimize oxidation on the cold side spund (in kegs or bottles) or prime and wait a bit before transferring - there's some protection against whatever inevitably gets picked up...

    Yep, one seems to hold just fine when not connected. The other one is still sitting in water and has lost ~2-3 psi since this morning. I think I'm getting small bubbles/leaks on 2 sides of the tee fitting - it's really hard to tell for sure.

    Only tested one - just put some pressure on it and set it aside for a few hours. It didn't drop. I did note, though, that if I moved them around a little and put a little side/lateral pressure on the connections, they would start leaking immediately.

    HSA and whirlpool question

    Consider incorporating a stainless pan as a cap when chilling/whirlpooling, same concept as a mash cap. If you wait to add it until you get below 140 or so, that can help remedy concerns with the cap keeping DMS from blowing off
