I have had a similar experience when trying to dry them with ambient air. They never quite smell the same. I have actually gone away from trying to dry them at all, and just time my brew day at harvest. You only get one time of the year to make a wet hop beer, may as well take advantage imo.

Where are you located sublime? I am in Ohio, and chinook grow like crazy here. Centennial do so so, and I have yet to get a cone from my willamette plant that is 3 years old.... Maybe I will look into adding Columbus to my list and get some rhizomes next spring.

How "recent" was this vacation? Fresh hops will naturally dry within a few days to a week after harvest. They really need to be used asap after harvesting. How have they been stored?

I know this thread is old, but I have been searching for days to try to find a good answer as to why bicarbonate is specified in certain styles in water calculators if it is essentially an unwanted item in the brew. I have been using bru'n water lately and I do like the system (thanks Martin!)...
