I'd say, since it was already alcoholic, let it ride. Might be fine. If not, your lab will be glad to finish the job, I'm sure. It's all I can do to keep my dog out of the room once the fermenter/bottle/bag of ingredients is open; he's a fiend!

Yes, this is a ton of great info! It's going to take me a while to build up to a recipe of this magnitude but I feel that anything Chimay is a worthy goal.

Anybody got a recipe for an ale similar to the Chimay Grande Reserve (Blue)? A search brings up 500 threads and I'm halfway into a bottle right now so the attention span just isn't there. But what a wonderful ale! Would love to start thinking about a similar recipe if anyone has any ideas.
