    Yeast for store juice cider

I found a great deal on 100% apple juice today so I bought 45 liters. It's just regular drinking apple juice, but the ingredient list is just "100% apple juice", so I don't think there are any preservatives or anything - presumably it's just filtered and pasteurized. I've only ever done cider...

    Failed at making pale ale...

I often ferment US-05 at 62F, measured by a probe insulated to the wall of the fermenter, and I've never personally noticed peach esters, but from what I've heard from other brewers, that's definitely in the danger zone. I'm with @Dland: I suspect you may have ended up with a decent beer if you...

    Sudden strange efficiency issue

Got it. That's out of my wheelhouse, then. I can say for certain that 80%+ in an hour or less is easily reachable with a fine crush, a couple stirs, and a small sparge in a low-tech BIAB system, and I've been in that range on my few no-sparge batches as well, which I'll only do if it's a pretty...

    Sudden strange efficiency issue

You coarsened your crush (and inexplicably used two different crush gaps on the two batches) and shortened your mash length on the same brew day. Both of those are liable to reduce your efficiency. If you had finally achieved consistency with your process, why would you make changes to it? And...

    Failed at making pale ale...

Or "giving up and going with kveik strains".

    Sudden strange efficiency issue

"I thought I had solved my efficiency problems, but then I changed two of the most crucial variables and suddenly my efficiency dropped again!" User error. To achieve consistent results, apply a consistent process.

Help w/ Off Flavor in multiple beers, across multiple batches

If old 6-row is a common factor in all of the bad batches, I'd start by cutting that out.

Is DME-only brewing a good idea?

So how much did you steep? Really just .4 oz? Or was it 4 oz or the whole half pound? 4 oz seems about right for a two gallon brew. A tenth of that probably won't make a perceptible difference versus not steeping any grains at all.

    Lazy-gyle brewing

Seems like a sound plan to me. You shouldn't need to worry about conversion with any crystal or roasted malts. I do something like this most brew days, though I've been too lazy to even bother with extra steeping grains. I differentiate by splitting the wort unevenly and topping off to make...

Is DME-only brewing a good idea?

Should work just fine. What's this about steeping .40 oz of grains, though? What grains? What are you trying to gain from steeping such a small amount of mystery grain?

    Fried cow brain

Kidneys are not bad if made right. Step one is cutting them in a way that gives a ton of surface area and boiling the piss out of them (literally). In China, they're then stir fried with a ton of sesame oil and various other seasonings. That's pork kidneys. I don't know about beef kidneys...

    low quality bottle caps

With my bench capper at least, the best seal is achieved with the least force. Adjust the height of the capper so the bell is just over the cap and it should be quite easy to pull the lever until it crimps the cap on. Pulling harder is just going to put pressure on the center of the cap that...

    Fried cow brain

I've had pig brains in hotpot and goat brains roasted right in the head, but never cow and never fried. What are they like? I'd imagine something like a fried soft tofu, crisp on the outside and soft on the inside?

    Beer at local Giant Food

Or those beers are less in-demand and this stay on shelves longer. That's not necessarily to say that craft beers and imports are in low demand overall, but there's a much greater variety in that segment than BMC so certain beers in those categories will take a while to sell. Yes, the big...

    Pitching on a Gose cake

Oh, and this was my third and best attempt at the ultra low profile brewday so far. Prep while the kids (and usually the wife as well) are napping, then do everything else after bedtime and leave the kitchen and everywhere else my brewing or cleaning takes place cleaner than I left it. Totally...

    Pitching on a Gose cake

It's in the books. I decided to go simple and light - hopefully light enough for the wifey to have one on occasion. 2kg 2-row "wizard malt" (I call it that cuz it's from Oz), 1 kg domestic whole wheat flour. Mashed in 15L RO water with 6g gypsum, 4g CaCl, and 10 mL lactic acid for about an hour...

Pale ale is super bitter- hopeless?

You could always boil and add a couple pounds of DME, double your dry hop, and call it a DIPA.

    Setback Stories

Not an actual electric brewer (yet), but I've learned (and forgotten) multiple times that a 3500 watt plug-in heat stick on the same circuit as the living room air conditioner equals a flipped breaker, though it's a mystery to me why the kitchen outlets are on the same circuit as the living room...

How NOT to run a Craigslist ad

Says he has other sales as well. Probably runs an antique/junk shop out of his garage and that's his standard delivery rate.

How to return wort to mash tun recirc?

This is the LoDo subforum. You're giving these guys nightmares right now with all that copper and splashing! :D
