    bottle labels

    Definitely oxyclean an hot water for 30 minutes... Do not let the bottles fill up because oxyclean will leave a white film on the inside. I fill my bottles up with water about half way and stand them up in a large pan with hot water and oxyclean. 35 minutes later labels peel off with ease...

    Not So Hoppy

    You'll be fine. If I've learned anything from brewing/reading/researching its that you'll never really know exactly what your beer will taste like until its done. Sanitize well and everything should be just fine. Btw you shouldn't dry hop until 5-7 days before its done.

    Risk of Contamination? I'm getting worried.

    I recently transferred about 4 1/2 gallons of beer from my bucket into my 6 gallon carboy. My concern is that with quite a bit of headspace it's at risk for infection because there isn't enough c02 being produced in the secondary to protect the beer from air... any thoughts?

    Yes of course! Can you still taste the hippiness of the beer? I'd like a berry taste but just slightly.. Maybe like a berry finish.

    Fruity Pale Ale??

    For my next brew I was thinking a pale ale with cascade hops and some kind of fruit tossed in the secondary, maybe like cranberries or something similar. Any ideas? Suggestions? Concerns? I've never done anything with fruit before, neither have I had a hoppy/fruity beer!

    Add Water To Secondary??

    To be honest I'm not sure whether or not oxidation is a threat with this particular beer, it's a Sierra Nevada clone. I have not met my target OG yet. I'm fine with a few less bottles but since I used the amount of ingredients for a batch of 5 gallons will less than that be a big deal taste wise?

    Add Water To Secondary??

    So on the 24th I'll be siphoning my beer into my secondary for another week and when taking a reading I noticed that I have a little less than 4 1/2 gallons when my recipe called for 5. Would it be bad to just add an additional half gallon into my secondary after or before I siphon?
