    I'm worried my second batch didnt' ferment

    I tasted it...it's kind of sweet... ****. This happened with my first batch, and I don't want it to happen again. Incomplete fermentation. What can I do? By the way guys, thanks for the help, you all are great.

    The krausen fell in on itself, actually. By residue, I meant that crap that builds up on the sides of the fermenter. It can't be a seal problem, when I press down on my primary fermenter cap the water in the airlock moves. But I will siphon some out and taste it.

    fist batch...too malty and sweet

    This is exactly what I did on my second batch. 2.5 gallons boiling, 1.5 gallons in the bucket with 7 lbs of ice. I pitched the yeast on top, it was 80 degree water. It still didn't seem to ferment, it never bubbled, I racked it on day 10 and it tasted kind of like the batch I have in bottles...

    My second batch was in the primary for 1 week and 4 days, I just put it in the secondary. I'll probably leave it in there for at least two weeks. But I had a taste, and it still tasted a bit too sweet! Think it should mellow in the second? Nope.

    Yeah but theres no way it's going to screw anything up. It's just going to multiply faster...which would explain why the top busted off.

    Were the bottles upside down? I bottled my first batch today, and the bottles took fifteen minutes to dry. I just set them upside down in my dish holder thingy.

    Errrg...no bubbling...

    Unlikely, because the tube never really bubbled, and I just sprinkled the yeast right on top of the brew dry. Oh well, wait and see I guess.
