    The hoppy taste will diminish a bit over time. Are you sure it's done carbonating? You said it didnt hiss much and there doesnt look to be much foam on top. Did it pour with any head to it?

    It's fermenting but the 165 probably killed a lot of the yeast so there arent enough to take the FG down to where you want it.

    My peach honey wheat beer is extremely sour

    I'm very new at this but I have been reading that if you use a Safale 05 at fermentation temperatures under 60F you will end up with some mild peachy flavors. Possibly try that next time instead of actual fruit?
