    Campden tablets necessary if diluting with RO?

    FirstAid, I'd definitely still use the Campden tablet on the tap water. They're pretty cheap and it doesn't take much chlorine to ruin a batch of beer. Insurance is cheap! Cheers!

I've got some of the crappiest water in America (SoCal drought water) and I get 0.0 Brix and 1.000 sg with refractometer and hydrometer respectively when I check it out...

    Phug, I'm pretty sure the cheap refractometers have a bad sg scale - the Brix might be right, but don't trust the sg scale. If I convert your Brix values to sg (with a default wort correction factor of 4%), I get 10.6 Brix is 1.041 sg and 12.5 Brix is 1.048 sg So, that's a delta of 7 and 8...

    alphaomega, DIN connectors aren't that bad (as long as the pins aren't potted in place - if they are, then I agree). I just use a pin extractor (link below) to pull the pin out of the connector, solder to the now bare pin, and then put the pin back into the connector. Unless I'm missing...

    Artifishal, Now I understand. I assumed that the white plastic part that the Nalgene attaches to is removable. I that case, yes, the canning jars will make storage of harvested yeast easier and allows for more flexibility in terms of a wide variety of jar sizes.
