    heheh, Cool will do . Thanks Revvy I can't really tell from that Graph, but I'm assuming Beersmith will be able to tell me how much table sugar to use with the amount I have. Based on that photo, would you lean more towards 4.75? or about 5.0?

    That's interesting. I am making a brown ale. So why the brown sugar? What are the benefits? does it improve the taste? How much would you need to put for say 5 Gallons? Well, I'm not even sure how much I have because I forgot to mark my carboy. I'm saying 4.75 - 5.0

    I racked it off after a week now my yeast seemed to double overnight

    I did the exact same thing on my first batch. I think I racked too soon as I have the same symptoms. I'm thinking of getting another kit today and this time I'm leaving in primary for at least 2 weeks if not more.

    So I guess reading this post answers a question I was going to start a new thread with. The Kit I had bought did not require me boiling the wort, simply mixing liquid into water and pitching the yeast once the temp was between a certain range. Is this what's called an Extract kit?

    Yup, exactly what's going on, the yeast is slowly making its way to the bottom :mug: I did a light bump/nudge to the carboy which made some fall rather quickly to the bottom. So 50 should be cool for this stage?
