    Depends on your branding. Straight will work with anything. If your branding had any sharp angles or mountain peaks then the angled could be part of the overall design.

    I would say no on the bme then if you don't want the internal coil. I added butterfly valves later. Easily added.

    Beersmith does a nice job of calculating calories, but I'm also interested in "macro" breakdown for carbs and protein so I can put it in MyFitnessPal. Is there a reasonable way to come up with carbs and protein numbers?

    System Balancing - line length vs flow control faucets

    I run 5' lines and flow control. Works for me. I always have a variety of beer on tap with different carb levels. Don't want to mess with changing lines as my brews change.

    completely confused about water...

    Don't "critical path stack" you can make a good ag brew without knowing water chemistry first. You may get lower efficiency or other things that prevent you from having a great beer, but don't worry too much and jump in and learn as you go.

    Length of brew

    There is still alot of clean up done by the yeast after visible active fermentation. Don't rush it. Id go for at least 2-3 weeks, checking gravity of course.
