For the amount of time involved it pretty much takes the same amount of time to do 20 gallons as 5. For my system I've done everything I can to eliminate the time wasting steps.

You will be fine. A local brewery here only buys crushed grains as it speeds up their brew day and who knows how long its been crushed. They make decent beer.

What yeast strain did you use? Different yeast strains like different temps and if out of their comfort zone they might produce things you head does not like.

I use Alpet D2 from Moorebeer. I am overly paranoid about sanitation and any spill no matter what size gets cleaned up with this stuff.
