    Yes. As far as I have seen, the way to pull 2 voltages off 1 service is mulit-phase. So the system is probably designed without 110V.

    I agree. If you want to improve performance you need colder (or faster absorbing) coolant, or more flow. Easiest, get a pump for your water!

    Current transformer would go on your incoming power. As close to the service as possible. Make sure it is the same one that you pull 120V off of. Which red wire to what coil? You mean on your mains contactor?

    Recommend simple, robust pid controller

    Autotune is your best bet on that one. Otherwise you have to figure out how to tune a PID yourself, which is far from easy to do correctly.

    Yes, the air will cool faster than the liquid. You want to at least tape it to the side of the fermenter though a thermowell bung is your best bet.
