Saison Turns Black in Secondary w/Brett

I took The Mad Fermentationist's word for it: "Goose Island Beer Co. – Matilda, Juliet, Sofie" Max - I had read that theory, but thought it might not apply to my situation for a few reasons. The Beer had been in primary for a month, so most yeast had fallen out before siphoning. Also, the...

    Pellicle Photo Collection

From a tad of Wyeast 3278 (Belgian Lambic Blend) and dregs from Jolly Pumpkin Luciernaga, Cantillon Rose de Gambrinus, and Cantillion 100% Lambic. Was only present for about 2 days...now gone.

Saison Turns Black in Secondary w/Brett

I have a saison that was in primary for about a month (5gal better bottle) that I kegged. Before kegging, I siphoned a gallon of it into a gallon glass carboy. I used the same siphoning (auto-siphon) and sanitizing techniques i've always used and never had a single problem. I then added the...

    When to pitch Dregs??

Thanks for the responses. I think I'm gonna have a bottle while I brew and pitch the dregs with the Roeselare and then toss in whatever I drink along the long wait or into another batch. I will check again, but I do believe I have relatively young cantillon bottles. So hopefully I can get...

    When to pitch Dregs??

I'm going for my first fruit lambic (and first sour period). Would like a quick suggestion on when to pitch some dregs. I am going to do the primary fermentation with Roeselare (3763). I also have several bottles of Cantillon (Kriek, Rose de Gambrinus, Grand Cru, Iris, Geuze) and would like to...

    Black Belgian IPA Recipe

Yeah if blindfolded, you would never think it was dark in color. I usually do a 60min, 15min, 5min, flameout schedule, but I would need to look back at my beersmith to figure out amounts at each time. I'll try and remember to get on this evening and post it.

    Black Belgian IPA Recipe

It ended up being outstanding. Probably the most interesting and unique one ive done to date. It's been a while, but i think i hopped it up with a bunch of Falconers Flight, Centennial, and Citra (and also dry hopped with Falconers). It had an incredible nose and up front taste of citrusy hops...

    Coffee Porter No Head Retention

Well, I'm now pretty sure it has something to do with the oils in the coffee. It is fully carbed coming out of the tap, but then it immediately fizzles away. The beer still tastes good and is carbed well, but the aesthetics aren't there. Oh well, there could be worse things than a beer with no...

    Coffee Porter No Head Retention

I have not bottled it yet. Trying to get the carbonation right first and can't seem to do so.

    Coffee Porter No Head Retention

I didn't actually do it myself. There is a guy in my office building that roasts coffee professionally that I got it from. I have used his extract before with great results, thus making this that much more of a puzzling situation. As far as the porters/dark beers taking longer to carb, would...

    Coffee Porter No Head Retention

Thanks for the replies. I think it could be either or both of your suggestions. I guess the only thing I can do is give it more time and see if that helps. If it is the oils in the coffee killing the head, I guess there is nothing more I can do?

    Coffee Porter No Head Retention

So I set out to make a coffee porter. I made a typical porter, nothing out of the ordinary, and then added cold brewed coffee extract from a specialty roaster I had used stuff from before with no problems. I added the coffee when I kegged it. I originally was going to put it on nitro, so I...

Complete Nitrogen System and Kegerator - $300

Umm...not sure I really need anything. I've got another 2 tap kegerator, so for the upcoming move i've got to get rid of this one. So, probably not up for a trade, but if you have something cool that might work, cant hurt to hear it.

Complete Nitrogen System and Kegerator - $300

http://www.midwestsupplies.com/nads-chrome-stout-faucet.html I believe this is the same one. So it says it is chrome. I wanna say it is chrome everywhere except for the tip of the faucet, which i think is stainless. It's a pretty sturdy faucet. Does not look or feel cheap (and isnt at even $75).

Complete Nitrogen System and Kegerator - $300

I have a complete homebrewing nitrogen system and homemade kegerator for sale. I bought it 4 months ago and have used it for one beer, and it works amazing! It makes your best stout/porter/whatever even better. Sadly, I am moving and will not have room for the system and fridge anymore. Again...
