    From my experience, it's no big deal. I let pretty much all my beers sit in the primary for a month w/ no issues of autolysis. According to Mr. Palmer, if you have any autolysis, you know.

    Who's my Chicago homebrewers?

    Northcenter here. I'm darn close to Brew Camp. Guys there are great. Prices are as low as the bigger Brew & Grow (which I like too). It's a great beer neighborhood with Half Acre Brewery, Fountainhead, and Bad Apple. West Lakeview liquors and Armenetti's are a couple blocks away too.

    Questions on secondary

    Reiner - the thought process behind pasteurization in the dishwasher is to kill any active yeast to prevent bottle bombs in the sparkling cider. The original pasteurization of the apple juice is to kill any nasties in it prior to you drinking it.
