    My fermentation seems to be slowing down as well after a week. Its in the secondary (last night) and I haven't seen the lock bubble once. Didn't seem to be much krausen on top either. At what point should I decide whether to add more sugars?

    I would imagine refrigetor temps are fine. Maybe not for 6 months... but, everytime I go to my local HBS their hops are stored in a regular refrigerator. Like most things, they can be stored fine at refrigerator temps, but will stay longer in the freezer.

    My Raspberry Chocolate porter came out amazing. Probably one of my best brews today. The raspberry flavoring became real tart which is in nice balance to the chocolate malty flavors of the porter.

    Not quite how I would have done it....but it depends on the beer you are trying to make. Generally I get my water to about 145 deg before putting the grains in. Then, I steep for about 45 mins at this same tmep - not boil. You want to remove it from the heat when you add the extract...
