    Ah, so it's a good idea to dunk the entire plastic container before pouring? Never thought about that, the water flowing over the lip that's unsanitized. I guess you could just give the lip a few good sprays of star san before pouring, right?

    You didn't have any trouble with the wort burning easily? What can I do to prevent that? Just stir more often, don't dump the extract in directly on the center?

    Man, I had A LOT of flakes in there doing boil. Like, a pile of them. Like I said though, I strained all the solid flakes out on transfer. Sounds like I'm in for some caramel notes though! I'm saying goodbye to the granite-ware, taking a look at this SS from amazon...

    Wow, you guys were right. Got the pot all cleaned up and it looks good as new, no flaked off spots after all. So since it was indeed burnt wort, will this affect the final product in any way? Like I said, I strained all the solid flakes out...but perhaps there will be some off flavors present?

    Yeah, I'm not even doing partial mash. Just extract (+steeped grains). Thanks everyone for all the info! I'll be sure to keep an eye on the temp, and not squeeze just for good measure.

    Well, so since it's not only dependent on temp but PH as well, do I need to add a PH check to my steps? Or is this a bit overkill? If so, what's the best way to go about doing that, and altering the PH if appropriate?

    How long does it take Star San to dry? I figured if I'm gonna sanitize my fermenter when my wort is cooling I would wanna make sure I'd have enough time for the sanitizer to dry.

    It is just plain extract, with 1 1/2 oz of Hallertau pellets to be added at the beginning. The recipe is for an Amber Ale. It also says hold at a "gentle" boil, which was odd because I thought it needed to be rolling and vigorous.
