As for the why, malolactic fermentation adds body, softens, brings forward buttery notes which would compliment the honey notes. Oak aging rounds out the sharp edges, adds some vanilla, toasty woody notes and tannins which add body and help to balance sweetness.

Update: Last night I added 3/4 tsp of Potassium Bicarbonate to the 3 Gallon batch. It fizzed happily. Checked it again today and it only went from 3.35 to 3.41. But Abv is now 9.1 - a nice jump. Maybe the Potassium Bicarbonate did more than I'm seeing because the ph dropped as the abv rose? Not...

This is my first mead and it’s a hot day, all windows closed and fan off and I’ve just made my Must and pitched the yeast and am aerating the must and I counted three drips of sweat off my head, right into the must. Probably loaded with body-yeast. How bad is this?
