    How to avoid infection when adding fruit?

    If you add fruit after a week or two of fermentation, there should be enough alcohol(depending on ABV) to help an infection from starting.

    I've made several gallon batches of JOAM with some fruit or yeast variations. I've found that if I use something like safale 95, it clears and taste better just a bit quicker than with bread yeast....

    Is it just me, or everyone? (Dry hopping)

    I just had this experience with dry hopping Citra hops. AMAZING aroma, but- a tad grassy. The beer I had was only 5 days old. I always sample a bottle at 5 days( just some ritual I have). So- I'm hoping the grassyness fades a bit.

    I just made a Citra Only IPA. 5 gal. Dry hopped an ounce of Citra. I got that grassy taste, almost a little too grassy. Amazing aroma tho!

    I'd go less. I made three gallons of cider back in February with one lime per gallon.....whoa! Ive read if you use lime, just use the zest..... My two cents tho!

    Add more grain! Get an ABV boost! I usually end up adding more hops and have recently started to dry hop. I just bottled five gal of the Simcoe IPA but used Citra hops instead and dry hopped an extra oz!
