    Another Cider Thread

    I used one ounce of thin sliced peeled fresh ginger in secondary for 3 weeks. At that time, tasting had good ginger flavor but the cider was still hot. I racked to a tertiary and removed ginger while aging longer. Hope that helps.

    That's what I did, letting it steep through the boil and 5 min simmer. I think it's a good cinnamon taste without being over powering.

    Just about every high end grocery store carries a glass jug of apple juice which should work. Note that the diameter of the cap is not always the same as the "cider" jugs so the 28mm airlock caps won't fit.

    Quick ? I have a yeast that's 79-90F but my fermentation area maintains a near constant 75. Is this going to be an issue or just take slightly longer to ferment?

    It's only certain (and limited) varieties of pears as listed above that will work. Think I'm going to try an Anna and either a Golden Dorsett or Ein Shemer if I can find it. For pear, I think Ayers and Kieffer. All subject to change as I do more research and speak with local tree people.
