    First brew underway

Did you check FG before or after adding the priming sugar and guava flavoring?

    First brew underway

I do "two vessel" BIAB and love it. Look up "partial mash" as well, that's how I made the bridge and it was perfect. I tend to do 2.5-3 gallon batches as well just so I can brew more often/try different styles or modifications to recipes that I like. I don't agree that the fermentation...

English Ales - What's your favorite recipe?

Thanks for the resources, that's more info than I've seen other places. Other sources just calculate IBUs because they weren't in the brewing logs, especially 19th century. So the sources would just calculate based on -amount- of hops in the recipe, fully understanding that this is never accurate.

English Ales - What's your favorite recipe?

Great blog! Anyone have any info on Allsopp's Red Hand? Not even Ron has anything that I can see. Admittedly I just like the name, but after reading so much about the brewery and not finding ANY recipes I'm a little bummed. The gravities for a 1901 version are in one of his charts, but that's...

If anything oxidation could be an issue, but I still doubt it. Fill it back up and bottle when you're ready.

Yet more evidence that commercial brewers do not mash at 5.2 to 5.6 pH ...

Pssh my favorite saison is mashed in a cooler and we have 5 steps! (Okay, that's including mashout/batch sparge...) We start very thick... At least we're getting somewhere with going about testing this.

    Lager-like ale

Lot of good advice in here. You can also use a kolsch yeast and kind of fake many styles of lager pretty well. I've done this with pilsner and vienna lager. Just "lager" it in bottles or keg for 4-6 weeks once it's packaged and conditioned. I've had good results.

    Low Enzymatic/Cold Mash/Low alcohol beer

This is exactly what I was thinking. WLP002 will drop out like a rock and refuse to do anything at even a couple of degrees below its ideal fermentation temp it seems. At least that's been my experience with the yeast. If you cold crashed I would be very surprised if it kept doing anything, even...

Tips and tricks for building a stout grainbill

Good stuff here. I play with amber and/or brown malt as well sometimes, but I tend to agree that simplicity is best. When you start getting multiple types of roasted malt and a complex grain bill, it can take quite a while to really mature and blend. That said, when it does it's quite nice in my...

    First brew underway

No need to secondary any of these really. On bottling day, make sure that you have everything you need at hand, and organized. Think through your workflow. If bottling by yourself, my recommendation is usually to fill 6-10 and then cap them, then go on. Once they're filled, keep them somewhere...

What does this step mash accomplish?

I'm sure there's something more sophisticated out there, but this is what I use. https://www.rackers.org/calcs.shtml If you use the "Rest Calculator" it calculates how much boiling water you need to add. I find it pretty accurate, but you do need to know what temp you're at at the moment and...

We used those to make grilled cheese on the fireplace when I was a kid. Not sure if they're actually for something similar or not, but true story.
