    My response from Shiner/Spoetzl Brewery

The problem was that your question never made it to a brewer. It's like finding a job - you are better off getting your resume to the person doing the hiring rather than HR. I'd bet the head brewer could divulge some of the recipe information if he wanted to, but you're never going to get a...

Calling the Kolsch and Pils drinkers!!

The Wyeast Kolsch yeast is very good. Don't be afraid of a little wheat, but mainly due to the Reinheitsgebot there would not traditionally be any wheat in the beer. Use some German Pils, caramunich or carapils to taste, mash is OK and use the WYeast 2565, make a starter. It's an easy drinking...

Pale ale getting old ... can I add new hops?

I'm not fond of trying to mask bad beer. I'd just dump it and fill it with something tastier.

    Brewing TV officially dead?

They haven't had a decent episode in a while. I thought they really had something pretty good there for a while. NB must have put the kibosh on the funding or something of that nature.

    Igloo FR464 mini-fridge

There are lines in the top. They are over 0.5 inch deep though. Just be careful when cutting the hole for the tower and it should be fine. There's not much room for taps in the door in this one with standard ball locks.

    Igloo FR464 mini-fridge

I converted one to a kegerator. The link is around here somewhere.

    You still buy Beer

I think homebrewers are probably the largest consumers of commercial craft beer. I know I still buy plenty of beer just because I want to try it.

Why is clear beer "better" than cloudy beer?

Depends on the style. If it's not supposed to be clear like saison, wit, or hefeweizen then I want it opaque, but not muddy. Other than that, there is no reason why your beer shouldn't be clear. Proper handling and or storage practices will clear the beer. The malt character should be fine...

    Aging Kolsch and Altbiers

I condition mine in primary in the fridge. Takes about 6 weeks for the yeast to drop out (depending on the yeast), sometimes sooner. Racking to a keg or secondary and getting it off the yeast would probably expedite that by a couple weeks or so. I wait till it clears to keg it so I don't have a...

Nice article on how AB InBev is trying to destroy good beer for higher profits

They will keep cutting on process and quality until their main constituency starts crying. Unfortunately that may be too late. I think it sucks that there are companies that operate this way, but part of me is relieved. As an aspiring pro brewer I say let them screw it up and drive those...

Advice for a brewer who doesn't drink

My advice would be to taste your beer. Buy some taster glasses and only do small quantities. You might find that you can handle drinking a little. Then move up to drinking a full glass. You should know what your product tastes like though. If you don't want to drink, to hell with what people...

    Adding flavors to keg

Shouldn't be a problem. The pepper I would use sparingly. Vanilla add a couple drops, seal up the keg and taste the beer. Rinse repeat until it's to your desired level. Jamil has an episode on fruit beer that covers this sort of thing on the brewing network.

    Using spent grains as bait?

Would be awesome deer bait. Also great for a catfish pond.

    Brewmeister Armegeddon -- 64% alcohol

High alcohol beers can taste good. Rapp Brewing Co. here in Tampa is making something called "OMG", it's 20% alcohol and from the test batch I tasted, it's freaking fantastic. Gonna be a special release by lottery only. Only way to get in the lottery is to buy a pint at the brewery. This 64%...

    Adding Taps to Kegarator

Get a toilet flange and 3" insulated PVC pipe drill three holes for taps and get the tower adapter kits. Paint the whole thing black.

Mold in my chest freezer/"fermentation chamber"

Luck isn't a part of it. If you have CO2 on the beer from fermentation and it's a closed container then no mold will get in.

Mold in my chest freezer/"fermentation chamber"

I get this in my ferm chamber. So long as you are careful and don't expose the beer, it will be fine. You might check the seal and make sure it hasn't pull away or flattened in some area. Usually if there is mold it's because warmer air and moisture is getting in. In my case it's because I...

    airlock activity within 30!

There are a lot of factors that play into how fast you will see actual CO2 production. Don't get caught up in the OMG it was bubbling in 15 minutes hype. Properly aerate or oxygenate your wort and pitch the correct amount of yeast for your specific beer at the right temperatures and the beer...

Funny things you've overheard about beer

Here's a good one... I made up a bunch of beer to serve at a charity event in town. We took the mobile kegerator and were serving beers out of the side. We got there a little late and were in a bad spot. There was a Bud/Bud lite truck there and the lone was about 25 people deep. No one was...

    Igloo 4.6 Cu Ft Kegerator

This one doesn't have a freezer shelf, just a tray that you pull out with the shelves. I might have to relocate the thermostat for ball locks.
