    Carbonation...which is to say, how much...

    Yeah, I started out at ~10-11 psi and keep upping it for the IPAs, now hanging out at around 13-14 psi and enjoying the results. This is all at 40F.

    Damn. I've never voted for any politician who's won, but maybe Nader has a shot here! I say you're a real homebrewer as soon as you have the pipeline full, so that you're drinking your own brew while you make the next batch!

    When to go to secondary

    I agree with Beer Snob -- just wait a bit more. I've always waited until there's no noticable action in the airlock before racking to secondary. I started out with the 1-2-3 method, but lately I'm closer to 2-3-4. I have to say, this is one hobby where procrastination sometimes really pays off.

    Airlock

    I'm in the '0' camp. My carboys are sitting in a temp-controlled chest freezer, and I open it once a week or so to either check on things or rack primary->secondary or secondary->keg. It always smells great opening the freezer. :D One note: I was keeping grains and whatnot in the freezer...

    I just bought my third keg, and second CO2 bottle/regulator. I'll probably top out with 4-5 kegs unless I start brewing 10 gal batches. The second CO2 bottle is useful, since I use CO2 with the beer gun, and to push beer during racking. Also, it provides a backup when one runs out of gas...

    A nice deal

    We moved to NC from Sunnyvale about a year ago. Lived in the Eichler neighborhood near Fremont and Mary. I still miss the Saturday farmer's market, and drinks at the friendly neighborhood bars (Beefy's Cabin, Blue Max, etc.)

    Be patient with kolsch

    I just racked my first kolsch into a keg, and it's looking really good, clear as a bell. I left it three weeks in primary, then five weeks in the secondary at ~65F. Primary fermentation was at around 74F, using Wyeast 2565. I didn't find this to have more trub, mess, etc. compared with IPAs...

    The homebrew is just icing on the cake. What really matters is that you recognize how hard these guys work, and relate to them very differently from the people who bitch and moan at them. Good on you!
