    sodium metabisulphite

One of the first pieces of advice given to me by a few homebrewers was "take all the Sod. meta.bisulf. and chuck it away before it kills you"! I don't know if they were exaggerating but one bloke I know can't drink anything that has come into contact with it without developing massive headaches...

    out of date kits!

You might end up with a darker lager with an old kit. My local Home brew shop reckons that using any kit within 12mths of its used by date is a bit dodgy (apparantly they have 2 yrs from the time they are produced) I did up a Coopers Pale ale kit that was within six months from use by date (got...

    Bottles with screw caps

Hey El P. No nothing really different, just put them on and pull the lever! Only thing you might find is a slight tendancy to get "stuckish" in the head of the capper rather than the glass crown than just stay put, just a liitle extra pressure and they come out, never broken one due to that...

    Bottles with screw caps

One of my earliest acqusitions of bottles was 15doz tall screw cap bottles, Using a bench capper I have never broken one during capping and none have ever lost pressure. The only doubt I have with them is that beacuase they are a glass/plastic amalgum and are lighter than the crown seal glass is...

    Cider Kits...?

Yeah Janx is right the quality in effects the quality of end product, however if you don't have and handy apple growers the kits are fine but a bit of extra apple juice in the mix never goes astray and adds to the flavour. Have fun

    Which yeast?

Thanks Guys I'll give the Mex a run, I was given these two for nothing from my local H/B shop. They had been sitting in the fridge for a few years, I have since cultured them out and they are alive and well and just waiting for a wort to jump into. Cheers Alx

    Ingredients for cider

You can add malt and/or dextrose, I always add extra dextrose, but I have only ever done them from kits, adding juice. For some reason my head keeps telling me to put cornsyrup in to "Thicken" it because something offends me when it doesn't have any head, but maybe that is just me. Mine brew...
