How did I get into this mess? Help a dad out …

I am a relatively adept home brewer, 7 years and well over 400 gallons brewed … . My daughter got two kombucha kits for her birthday (from two different well meaning relatives), and we followed the instructions and now have a half gallon and a gallon batch of kombucha polluting sitting in my...

    Aluminum Can Shortage? Seriously?

Remember when people laughed at Sierra Nevada for this … seems less silly now. ;) https://www.craftbrewingbusiness.com/equipment-systems/check-out-sierra-nevadas-new-co2-recovery-system/

    WLP655 - Belgian Sour Mix

Short answer: This is not your traditional ale process. Expect to wait for the results you are expecting. And by wait I mean this will be a beer that takes 2 years to mature. As mentioned in the White Labs letter above, following proper sanitation should keep you safe. However, as suggested by...

    Aluminum Can Shortage? Seriously?

But wait, THERE'S MORE! As a result of lower ethanol production resulting from less demand for fuel ethanol, we are experiencing shortages of one of its byproducts: food grade CO2. Time to buy bottle futures …...

Sous Vide with 10 Gallon Cooler Mash Tun

Curious: what does the cornmeal do for you? If you're doing the sous vide/smoker method, just leave the brown sugar out for the sous vide step and then pat it on before you go into the smoker. I think I'd recommend doing the same with the cornmeal since 24 hours soaking in pork fat will...

    Are solar panels worth it?

Don't forget that San Diego, while on the coast, is essentially desert climate … People here think that 60% humidity is ridiculous. I moved here from DC where the humidity feels like it runs about 300% from July- mid Sept. Add in the fact that people here don full on parkas if the temperature...

    Bottling into a uKeg?

This is true to a point. In my experience, the gaskets seem to leak with higher carbonation beers. I count anything meant to be carbonated to a volume of under 3 as safe for UKeg carbonating. This doesn't seem to be an issue if the beer being put in is already carbonated so what I've taken to...

    Big Mouth Bubbler lid slipping

I got a strap from the hardware store. I think it cost me $2. Works like a charm. Before that, I used two bricks, one on either side of the airlock.

Acquired some frozen cherries.....do I have to pit 'em before use?

This is the second sous vide brewing thread today I've seen go from being about brewing to being about cooking … makes sense, beer and food go great together!

Sous Vide with 10 Gallon Cooler Mash Tun

I don't know why I mix standards … the instructions with the sous vide came in ºC and they've stuck in my head. The smoker (offset charcoal) has a dial that shows ºF. I suppose its a consequence of having grown up an ex pat in Europe: born into American standard measurements, brought up on the...

Sous Vide with 10 Gallon Cooler Mash Tun

Interesting … If you haven't tried a sous vide pork shoulder, I highly recommend it. Stick it in the bag with pork spices (I have a mix, I'll drop the recipe in here but I'm in the man cave right now, not the kitchen). 36 hours at 62ºC and it's awesome. If you have a smoker, pull it out after...

    Bottling into a uKeg?

I'm not familiar with the UKeg Go, I have the older model that looks like a piece of steam punk set dressing. You can still do it, you are just going to have to open the UKeg after you think it's carbonated and then replace the cartridge. Again, this should probably be a last resort when you...

Acquired some frozen cherries.....do I have to pit 'em before use?

I recently discovered that the sous vide actually makes awesome corn on the cob. You can put the butter in there while it cooks. And asparagus, same deal. I even saw a sous vide recipe for hollandaise in a bag that I haven't tried yet.

Sous Vide with 10 Gallon Cooler Mash Tun

Interesting. Mine is older, rated at 5gal, and the min/max range starts just above the hole where the impeller pushes the liquid out and about an inch below the bit that houses the circuitry. Not sure what the scale is in you photo, but the distance between min and max on mine is about an inch...

    Are solar panels worth it?

Just a heads up: the Federal tax credit went down to 26% this year. It's slated to decrease slowly over time. I can't remember the exact schedule.

    Are solar panels worth it?

We are in San Diego in about the same size house as you with a sloped roof facing due south. We just installed a 19 panel system. I'm still waiting for the installers to send us the app that shows usage, but our bills have been $16/month since we put the system in. $16 is what the power company...

    Bottling into a uKeg?

Assuming, as mentioned, you are asking if you can carbonate in a UKeg, the answer is possibly yes: 1. If you have the 64oz UKeg, the answer is yes, if you have the adapter to use the larger CO2 cartridges. Do not (and I say this from experience, very bad experience) try using off brand...

Sous Vide with 10 Gallon Cooler Mash Tun

I was told by a chef friend that the reason for the minimum immersion level, and this fits with the tiny bit of what I know about outboard engines, is because the impeller relies on the water as a lubricant and running it dry can damage the impeller. Curious: At 800W, what do they say the...

diving in to ambient fermentation …

Good to know on the citric acid. Will pick up some lactic at the home-brew store. Lambic is the long term goal. The short term is just to see what, if anything, lurks in the basement after 7 years of brewing, including quite a bit of pseudo lambic brewing. I am anticipating this being...

    small batch Induction burner

I think they mean zones in the sense of times as in heat to 126 and hold for 20 minutes would be zone one, heat to 155 and hold for 60 minutes would be zone 2, and heat to 172 and hold for 10 minutes would be zone 3. It is confusing, stages would be a better nomenclature.
