    Not a problem. This is actually my base Wheat Beer. I omit the oranges add honey at 180*F during cooling for a Honey Wheat or I ferment and then secondary over Mango and dry pepper with habaneros (my favorite and the most popular for my family).

    That is why I don't use very much honey. Honey Malt doesn't provide as much honey flavor as you may think, IMO.

    Since you are cold crashing, I wouldn't think you would need to worry about the clarity. If you crash it at a reasonable temperature and let it sit undisturbed for 3 or 4 days, everything *should* drop out of suspension that you need to have drop. Make sure that you let it warm up slightly on...
