    i usually use one gallon of honey (about 14 lbs) and water to 5 gallons to make a 5 gallon batch. considering fruit additions and depending on the density of the honey this usually comes out to about 14-16% i consider anything over 15% to be a high alcohol mead

    I drank my first mead at a renaissance festival about 10 years ago and completely loved it. After some thought throughout the years and a game called skyrim, I've decided to make my own. Where did you guys first try, hear of, and decide to start making meads?

    you're probably going to need to bump up that honey at least 3 or 4 lbs to get a higher alcohol.

    uh... i think that would work if you have metal floating around your mead, but other than that, i couldn't see it being very effective.

    I measured the gravity yesterday as this has completely cleared and it was 1.005. i added 1/2 cup of corn sugar and bottled it yesterday! got 37 grolsch bottles out of it. threw one in the fridge and took it over my girlfriend's. the just-bottled, unaged got great feedback from her. apparently...

    My last batch was 1.140. I pitched one rehydrated pack. No starter, no energizer. It ate it down to 1.005 in less than 2 weeks. That being said, 1 packet is sufficient. Yeast multiplies

    Sounds good. Is this your first 5 gallon batch? 1 packet of yeast is good for a 5 gallon batch

    I have never heard anything bad about walnut. That mead sounds great! And bravo for seeding first. If I had a choke cherry tree in my yard I'd do the same, but I have no trees.

    i'll definitely document it. there's two valves. one a few inches from the bottom on the side of the cone and one at the very bottom. i guess the lees accumulates around there and after fermentation is done you just open er up and shut it off when its clear. technically you just racked. if using...

    you're not going to like this... but my buddy gave it to me. they can be purchased from high gravity brewing .com for under 200 bucks, though.
