German Pils PoB's Blue Ribbon Saphir Pilsner

i'm drinking this now. it's hard to say how it would work in something maltier, but I can't imagine it wouldn't at least be OK. In this pilsner, it's a fresh and juicy noble flavor.

    Car horn won't shut off

my vote is for swapping out the relay.

German Pils PoB's Blue Ribbon Saphir Pilsner

Blue ribbon at the local county fair. Not the most difficult achievement, but this is an excellent beer. If you've never used Saphir, give this a shot. A great SMaSH for the development of the palate. BeerXML attached. Recipe: Saphir Pilsner Brewer: PoB Asst Brewer: Style: German Pilsner...

    Being Inventive...

Dunkelweizen would be a great style to look at, at least as a starting point.

    Great Little Immersible Thermometer

nice find. I too am sick of the meat thermometer. You probably can get amazing battery life on something like that even if you don't remove the battery - they usually only use a bit more juice than an LCD clock.

    Stop using Irish Moss!!!

Hydrogen hydroxide - that's pretty old school. I do find hydric acid to be indispensible in the boil, however.

    Suggestions on kit.

If it were my choice to make over again, I'd get the 6.5 gal plastic better bottle for primary, keep the glass 5 gal for secondary, and call it good. That looks like a fairly complete kit. Watch out using the floating thermometer - you'll find a zillion threads on here about them breaking -...

    White rice as fermentable?

very common adjunct - you need to either cook it, cereal mash it, or buy it pre-gelatinized. You also must mash it with some high diastatic grain such as 2-row or 6-row. You can find a lot of recipes on here that use rice - BierMuncher's cream of three crops calls for minute rice, i believe...

    Malt Cider yeast

considering it's used most frequently to ferment 100% malt based beverages, I think you'll be just fine. Chances are, it is just not recommended for use in high gravity beers. Honey is the ingredient you should worry about causing slow fermentations, though in this recipe it shouldn't be an...

    Stop using Irish Moss!!!

Best path to getting some umami in your beer is let it sit on yeast too long :p make your own "autolyzed yeast extract"

    Stop using Irish Moss!!!

This sounds like something to keep an eye on, but not to freak out about. Add it to the list of substances with possible health effects, along with ethanol(!), fusels, phenols, DMS, etc. Personally, I'm more concerned about the hazards to my health due to the consumption of hydrogenated fats...

    Paintball tank size

did you carb the beer with the tank? If you're just dispensing, I'd expect about 5 kegs or so... not really sure how much CO2 you'd use up carbing with it.

    Finish Hops Omitted - Problem?

This is why I suggested the tea. Dry hopping results in very little bitterness contribution, but also very little flavor contribution. You can steep a tea for a short time and get both. It does get bitter fairly rapidly, so you have to stay on top of it.

    Finish Hops Omitted - Problem?

you can make a hops tea with the finishing hops (watch out that you don't let it steep in the hot water too long - it will get bitter pretty quickly) and add that to the secondary/bottling bucket/keg.

    Drinking beer makes you healthier...

old news. When I worked for Cessna, we had to participate in these online health evaluations through a third party in order to get an extra credit towards our health plan - the results recommended that I drink more. And eat more fish.

    Recipe for Mojo IPA?

That's a really good point to start from, and nice to have a side-by-side taste test of the two. I can't even get Mojo where I am now. Recipe looks good, and i'm reassured by your input. Probably will join you in brewing this recipe soon.

    New Brew

welcome! you might want to do a few more extract kits before jumping into all grain brewing. You'll learn a lot, get comfortable with the brewing process, and can still have a plethora of 'options' in your brewing. All grain brewing is rewarding, but gets expensive (some new necessities, and...
