    How long do you usually wait? I find beers seem better if you wait two weeks... But I will say that the IPAs I have done seem to be OK a little earlier I agree.

    Interesting enough I have never been to any of those! I love covered bridge brewery, behind the pale, and clocktower is a good brew pub. We are lucky in Ottawa to have a decent craft beer scene.

    1. I agree infections are harder to get than what you expect if you are reading these forms... You would think infections are easy to get, they are not, sanitizing isn't that hard and it seems like if you do that, you are fine... Even adding frozen fruit won't give you an infection.     I have also used "frozen raspberries" in a wheat beer, racked onto the raspberries in the secondary. I did not treat them in any way. Friend told me just go for it and it will work and it did... who knows... I will say the extract from brewers best is STRONG I find 2 oz is good, 4 oz is strong...

    I've learned if you like hoppy IPA beers its hard to go wrong. Citra is my go to for dry hopping combined with centennial in the boil for bittering. Citra and galaxy is also a good combo... Or Columbus and citra. Warrior and citra ect... I tend to stick to the USA variant s

    Just got a Festa Brew West Coast IPA kit today, has anyone tried it?

    If you are telling me this is better than the typical OBK extract kit, ie. the real "kits" with hops, quality yeast, steeping grains, DME, and LME... you convinced me I will try it when I want an easy brew day.

    I just cant understand why someone would brew one of these even in Canada. Twice the price of ordering a good extract recipe kit from Ontario Beer Kegs (they send you the DME. LME, Yeast, specialty grains and hops) just saying. If they really do taste amazing I would be interested to know. Cheers!
