    How Much Water?

    I bring it to a boil then add the first hops 10 mins later and start my 60 min timer (70 min total). I get approximately 20% evaporation per hour so I start at 6.75 gallons.

    Well, not to directly answer your question on where to get them... but as far as the 'any thoughts' part... why go three piece? I realize that its supposed to be for ease of dissasembly for cleaning but IMO this is a bit much. Almost half the cost for S.S. valves which are not the three piece.

    Can you put the C02 cylinder on its side or does it have to be upright? Would you put the regulators under the kegs? I checked the level of five gallons in a corny... it doesn't reach the inlet tube so I don't see where I will ever get flow back into the regulators even though they are...

    The relief was threaded into the top so I simply removed that, purchased a closed nipple and a tee which allowed me to fit the lid with the original relief and the valve.

    12 inch stainless steel spoon with slots in it. Works just fine for stirring mash. Got it at a cooking specialty store in the mall. I'm sure even Wal-Mart would have a similar product.

    The name on top is 'Kitchen Tested'. It is an 18 qt. I got it from e-bay. There are many auctions for such items. I like the fact that it is very heavy duty (the older ones seem to be more so than ones produced these days) and has no o-ring seal (relies on metal to metal seating surface)...
