    Uncork them, and firmly tap the top of the bottle with something that will not break the glass (be prepared for lots of fizzing). Should send a shock wave that will release the co2 from the mead Then re-cork and store cold.

    Well, seeing how the guy is a chef and a "foodie" then I think I will build an AG set we can share, and in the mean time brew some extracts to get the technique down. BTW, by technique, you mean adding hops and aerating the yeast? Cause I don't see any other points of failure in extracts.

    I'm wondering if anyone has encountered an extract recipe that was very comparable to the all grain version of the recipe. Better way to phrase the question is this. I want to make an extract brew, but I want it to taste as good as an all grain recipe :) Let me know of a recipe to follow. Thx

    Just bottle it already??

    You can never have too many carboys. Your other option which I highly recommend against, is killing your yeast and using a clearing agent. This would set the mead up to be bottled, but I've heard that interrupted yeast leaves off flavors.

    Glass carboys - Gallon jugs - Demi johns - Wine making supplies - Beer making 15 gallon glass demijon. Looks pretty impressive to me :) But you would have the ability to push liquids out with a keg.
