Thanks. Falconer's is around 9.9% AAU, so my beersmith is putting it around 29 IBUs (you have to add falconer's) with the same OG.

Can you? Yes. You might want to look into a 5 or 10 gallon igloo/gott cooler and then you could buy a false bottom as opposed to using a hop blocker/mesh braid. The head space will definitely effect the temp BUT you could use a piece of foam insulation (Cut to the size of your cooler) to take...
