    Stone Brewery

    man, nothing starts a weekend off like cracking open a 22 of Stone IPA on a friday night after getting home from work. We JUST recently got stone pale up here, which was nice to see, I enjoyed that as well, and smaller bottles of Stone ruination, I think 12oz of that is all I need anyway :-p

    I try to go 10 days in the primary if I can, but I just racked to 2ndary at 8 becuase I need my primary to bottle my IPA with. You're very close to your target, I say let it go a few more days, take a hydrometer sample and rack away

    Fourth Batch - NW Pale Ale - Need advice

    I use little mueslin bags on hops if I put in large quantities, but for a couple ounces or less I usually just keep my wort stirring spoon handy and I scrape out my strainer as the hops clog it up. Its worked out really well, scrape it out every 10 seconds or so, no clogs.

    becareful about stirring too much after fermentation has started. gentle stirring is all you want to do, anything vigorous will introduce oxygen into the wort/beer and can oxidize it. other thn that, 7 days down to 1.024 is pretty good, but high gravity beers take a long time to ferment...

    Cooling Question

    One thing you might try is chilled/bottled spring water, thats what I used for my first batch, and it worked fine. I ended up making my wort TOO cold though. I now do full boils with a wort chiller, I get down to pitching temp in about 7 minutes.

    Avoiding the Scorch

    I had the same problem, 185k BTU burner and liquid extract that scorched. I ended up doing late additions. I don't turn off the heat, but I do add it with only about 15 minutes left in the boil. Seems to work out pretty well that way.

    Something I've figured out about food and beer...

    I agree with the OP greatly. I enjoy beer when that is all that is on my palate. I find that food especially detracts from my palate and I enjoy the beer less. I perfer a tall glass of milk with most dinners (ESPECIALLY spicy foods) and a tall frosty IPA afterwards for dessert.
