I normally don't secondary--is that a requirement for this recipe, or can I just add the AE at the end of primary fermentation? I use SS Brewbuckets, and generally cold crash for 3-7 days after completing primary, then keg for carbonation. I do have spare kegs if secondary-ing is necessary...

Used Sweet Maria's for many many years, then realized they have a wholesale arm called Coffee Shrub. a 50lb sack from there costs about the same as two 20 lb sacks from Sweet Marias. :) I made the switch in September, and just received my third sack a couple of days ago.

Any time I hear the pump cavitating or sounding like it's running dry, shutting it off for a few seconds and then turning it back on again seems to re-prime it.

What is everyone's efficiency looking like? I seem to be hovering right around 60%, which seems on the low side. I've got the water parameters dialed in finally, so I'm hitting my post-boil volume targets. But gravity is typically significantly lower than expected.

If you set your element as low as it should be with the condenser, boil-overs are nigh-on impossible. I get a nice rolling boil lid off with my element at 65% power. With the condenser and the lid on, 28% does the trick.

Even that's overselling it--a surge protector would have MOSFETs and other circuitry in it to protect from overcurrent. I bet it's more of a glorified power strip, that merely connects one hot to two outlets, the other hot to the other two, and the neutral and ground to all 4. All wire, no...
