    You'll be fine. CO2 blanket will protect it. I have had beers with twice as much head space as that turn out great.

    The secondary has been placed in the fridge now. It was very hard to keep it still while walking down three flights of stairs but I did the best I could. Hopefully that won't be a problem. If I do a long cold crash, will that take ALL the yeast out of suspension and prevent bottle carbonation?

    I have seen yeast rafts that look like that, however I have also seen infections that look like that initially. Keep a close eye on it. You say that they are just bubbles so you should be fine!! Have a home brew and relax!

    I think it would do the same thing (carbonation) but flavor wise, I have read that corn sugar is the way to go. *Table sugar is cane sugar I believe

    My guess is what is said above: Either your bottle was not completely sanitized or you may have gotten some sediment from your pour into the glass....

    Yea I have the disadvantage of not having a hydrometer so I go off judgement... I will likely let it go for a few more weeks then bottle and just hope for the best. I choose to use Safale US-05 which everyone says is a great yeast for just about everything.

    I brewed an IPA and started it in the primary. NO PROBLEMS I transferred it to the secondary 8 days later (I know Revvy this was very early), threw in 1 oz of hops and a small amount of light oak chips. I do not want to have the IPA resting with hops and oak chips for more then 7-10 days...

    Sounds good I am thinking like 3 weeks in the primary then bottle? It's been over a week and i am still seeing little bubbles everywhere. Is there anything I can add into the fermenter which will prevent it from going super dry. I feel like it already has a dry strong smell to it.

    I guess I wasn't specific with my question. Will there be any problems fermenting it in the original plastic the juice came in? It is producing CO2 so I know it is working.

    I'm glad to hear that about the US-05 and did not know that about porters. The bucket is a 5 gallon which is why I like to piece together ingredients myself and make batches that are about 4 gallons. My better bottle is 6.5 gallon though

    If I read correctly you already have your kit bought....so you can follow the instructions given I'm assuming First off sanitizing is huge.
