    Thanks for the that answer. While waiting the 2 to 3 weeks in the keg (untapped), should it be in the kegerator at fridge temp or at fermentation temp? Basically, I am thjinking tht aging it will help improve the beer.

    Hi, I was wondering how important Ph is. I just checked and according to a 2004 water quality report (Still looking for a newer one) for my UD, the Ph in my tap water is about 7.2 to 7.4.     Thanks for all the replies. =) Is the fermentation cycle for wheat beers like hefeweizen pretty much the same as any other ale? 1 week for primary fermentation 2 weeks for secondary fermentation 3 weeks for bottle/keg conditioning Then refridgerate. ?

    A relay is a switch that opens and closes based on circuit logic. A thermister is your "thermometer" that changes resistance based on temperature. So the relay is switched on based on the resistance from the thermister, basically.

    I am not totally sure. The cool side gets pretty cold from what I can feel. I would guess in the lower 50s, maybe 40s. I have no way of really telling for sure right now. I was kind of shocked and happy to find a peltier cooler with built-on heat synchs.
