    Chili: Discuss

It looked nasty but it was good, there was something kind of sandy and gritty that I think may have been some seasoning that chipped off my dutch oven from the use of tomatoes and OJ though. It came out to about 3 quarts, we ate 1 quart, put 1 quart in the fridge for left overs this week, and...

    Chili: Discuss

Tonights chili: Cheap steaks and pork chops cut into cubes, bacon, chili powder, red pepper flakes, onion finely diced, smoked paprika, fire roasted canned tomatoes, cayenne, jalapeno salt, adobo, Frank's hot sauce, sriracha, tequila, orange juice, beef broth. I didn't really follow any...

    Chili: Discuss

I think I'm going to whip up a pot of chili this evening, I've got some cheap steaks and pork chops and other necessary ingredients so its going to be kind of a clean-out-the-freezer-and-pantry type of chili.

    Anybody else love egg sandwiches!

Thats one of my favorite bachelor food on a budget meals. Toasted Wonder bread, a fried egg, slice of processed cheese, mayo and A1 steak sauce.

    Chili: Discuss

A lot of recipes will use chicken stock with beef in chili because its more flavorful than plain old water, but it adds a different dimension and more depth of flavor than just using beef stock. But then the thing to remember is the difference between stock and broth. Stock is basically just...

    Dutch Oven Seasoning/Beef Stew Article

I know Wild Good Island when I see it! Here is the early spring view (best damn time of year) of the hills just outside my front door in western Sanders County.

    Dutch Oven Seasoning/Beef Stew Article

The dry vermouth is an interesting addition at the end of cooking, I might have to try that sometime. Makes sense though, eat stew with dry vermouth, then have a Manhattan afterwards as you watch the sun set over the mountains. Ahh.....

Did you ever try using a dutch oven? Look for the style known as a camp oven which will have legs on the pot, if you can find one with legs on the lid that is even better (Camp Chef brand "deluxe" camp ovens for example). Put your dough out on the inverted and pre-heated lid with just a couple...

    The Home Made Pizza Thread

I hate this thread because of all the people who have wood fired brick pizza ovens. I rent my house for f**ks sake and can't do anything permanent like that.

What to do with hot peppers.

I don't know the exact recipe, but you could make candied habaneros. I think the process is pretty much just melting sugar in a pan and rolling the halved habs in it until carmelized, then sprinkle with or toss in course sugar. You should be able to find a recipe pretty easily.

    Bacon...

I cook mine chewy but not crispy. The only time I do it crispy is when I have really thin cut bacon, and even then I only use it so I can make it into bacon crumbles for sprinkling on stuff. I always thought this was funny...

    The Home Made Pizza Thread

So here is something that I think could work..... The other night at my beloved semi-local brew pub Mick Duffs we ordered their mozzarella sticks appetizer. These aren't your standard mozzarella sticks though-they are made with pretzel dough and baked in a rectangular shape with the cheese...

I've dipped saltines (and tortilla chips) in chili before, but I think thats a bit different than what you are proposing.

    Liver: Discuss

Cut into chunks and tossed into the dog's food bowl. She gets at least one deer liver every year!

    Chili: Discuss

I think I remember the Good Eats episode where AB made red beans and rice and he said that it was a super healthy meal because the combination of beans and rice gives you every essential amino acid.

    Chili: Discuss

I don't let mine go all day, I do it in the dutch oven on the stove top with it just bubbling and usually after about 3 hours or so its done. Nope, I go half a cup. The tequila\oj bit is only a small part of the liquid in my recipe, there is a lot of liquid that comes from canned tomatoes...

    Chili: Discuss

I usually just let mine simmer until its reduced a bit and the flavors are concentrated. But I like a bit of liquid in mine and not necessarily really thick, like thicker than a soup but thinner than a stew. Kind of a brown gravy consistency is what I usually go for.

    When's my mother ready?

So how long can I save a SCOBY in the fridge? I'm thinking I'll keep one as a spare in case something ever goes wrong, that way I won't have to start over from scratch like this.

    What celebrity do you resemble?

Your avatar kind of looks like my friend Jesus Quintero, he's not really a celebrity but is somewhat known amongst the indie theater circles. http://www.jesusquintero.org/about-us.html
