    I read somewhere recently, not sure where, that if you store LME in the fridge, that you need to take it out for at least a week before you brew. Is this correct, and if so, can you offer an explaination? the reason I ask is that is that I'm trying to figure out why two of my last 10 or so...

    Freezing beer.. is it bad?

    I'm just curious what ill effect freezing might have on beer in it's various stages of production. I have a scottish ale in secondary in the garage, and it dipped down to 32... never saw ice crystals or anything, but I was out of town and wondered what might happen if it did start to freeze.
