    The best (well, my favorite) chili beer is called Safe Word from Free Will Brewing in Philadelphia. It's a mango habanero IIPA. I've had lots of others like it, but this is what they should all aspire to be. Perfect balance of citrus, heat, fruit, and malt sweetness. Delicious!

    At a small brewery last night, one of their brews is a light low ABV ale meant to appeal to the BMC crowd. A guy at the bar is pounding them and tells me "this is the best one they got, it tastes like regular beer!"

    Cacao Nibs

    Cocoa nibs smell fantastic but they add a sharp metallic bitterness that I dislike. Not worth the trouble IMO. I wouldn't try to fix this beer. Just drink it as is and get the next batch going with adjustments to fix what you don't like.

    If 3.0-3.3 pH doesn't seem sour to you, either the meter is off, or your perception of sour is non-existant. You're not packaging the beer in a sea shell are you?

    I used to buy single handled kegs from CHI company in 4 packs for $80 shipped. Glad I stocked up then, but would've bought more had I known where the market would go.

    Nitrogen beer on the go

    Well, nitrogen isn't important in this case, you just need the violent agitation to break out the co2. Nitrogen in a beergas setup is only used for the high pressure to overcome the restrictor sparkler plate, nitrogen doesn't actually dissolve into beer under normal serving conditions.
