    Thanks for all the input. As far as the recipe goes, I put it at 4 gal on purpose, I am a super cheap-o and am using free buckets from walmarts bakery. If I filled them up to 5 gal I would only have like less than an inch of head space. Will it be worth my money to get some of the 5.2 buffer...

    Summer Ale to IPA Extract Help

    Have you tried using any brewing software? I use hopville.com, its pretty easy and this type of program is the best way to to get the results you are hoping for. As far as bumping the ABV up adding 1.5-2 lbs of light DME would do the trick. If you could find out what the type and AA% of the hops...

    SHRIMP (no pics yet) what to make?

    Marinate in a bit of lime juice for 10-15 min and then grill them and glaze with a Mango Habanero salsa or some type of pepper jelly. Serve on top of some wild rice.

    Go here: hopville This is a web based beer calc program. There are a ton of other programs but this one is pretty easy to use. Using a program like this is the best way to formulate recipes, you can figure what you need to get the style you want (Original gravity, IBU, SRM etc.) Have fun!

    Which dry yeast is best for warmer temps

    I used Safbrew S-33 recently on an amber ale. The closet I had it in read 73 degrees for pretty much the entire fermentation. The beer tasted great, maybe not like a traditional amber but good imho.

    Mash Paddle Finish???

    I would not put any finish on it at all. Even mineral oil and linseed oil will start to leach out at the higher mash temps. What type of wood did you use? As long as it is a good hardwood you will be fine without any finish, just rinse it off and hang it up to dry when your done.

    Problems with head

    What is your current rinsing method? Right now, when I pour a beer I take the empty bottle, fill part way with tap water and shake. I do that a few times until its clear. Than I store them until its time to sanitize for the next batch.
