    Anyone for a 80 acre hoppy wheat?

    From what I can tell, just aim for a standard american wheat, bitter hop with something high AA%, and than late addition with cascade and Nelson Sauvin, dry hop with those same two as well. I am drinking some of this right now and I think the Nelson Sauvin is key, you can really taste it, sooo good!

    First Hard Cider- Help with what to do next

    If you want sparkling cider just siphon into bottles, prime and cap just like beer. The thing is that it wont taste much like woodchuck, your yeast will have eaten all of the sugar. It will be more like a dry white wine, not a bad thing just different than what you might be expecting.

    I highly reccommend using some beer calc program. I use hopville, its really easy and will really help formulating recipes.     Off flavors from...Star San?

    I have never let my bottles dry before filling them up. I sanitize, and just before filling I dump what little starsan has accumulated at the bottom of the bottle. I have never noticed the off flavor you are describing.

    1. I like to put the pellets in a muslin bag, but it is not really that critical. You will just have a little extra crud at the bottom of your fermentor if you dont. 2. I dry hop in primary, works great. 3. 10-14 days

    I thought the S-33 worked great. I hit my fg on the money, the beer is crystal clear and tastes great to boot. I guess everyone has a different experience. The was a feint banana nose early on, but by 3 weeks in the bottle was gone.
