    Witbier Turned Sour in Bottle

It was an extract kit from the LHBS. The flavor appeared or became detectable within a 3 day period between bottling and sampling the first bottle. 6lb Wheat LME 1lb Corn Sugar 0.25lb Carafoam 1oz Golding Hops (60 min) 0.5oz Saaz Hops (15 min) 0.75oz Ground Coriander (10 min) 0.25oz Dried...

    Witbier Turned Sour in Bottle

Is there any chance that this may have been a Brett infection? Or would I have other signs other than the sour taste? Since it was fine before going into the bottles, it would have to have been picked up in my siphon and tubing that was brand new, cleaned, and sanitized.

    Witbier Turned Sour in Bottle

After a month in the bottle they are still tasting fairly sour, although better than at first. So it's not getting worse, but very slow getting better. I'm not sure there is any difference this week vs 2 weeks ago. It's still not really drinkable. It also is still not very carbonated despite...

Worst Commercial Beer You've Ever Had?

I don't know if anyone had mentioned this. A couple years ago at a party, I had something called Beer-30 that came in a plum purple can. It was only like $10 a 30-pack and became somewhat popular around the college I was attending at the time. It has been the only beer I couldn't finish, and I...

    Opinions/Advice: Imperial India Black Ale

Thank for all of the advice. Just an update, I ended up brewing this today. The LHBS was out of chocolate malt so I used the original recipe I posted but just substituted 1lb of the caramel for more 2-row. Boiled just over 3 gallons and topped up to 5 and had actually overshot my estimated OG by...

How long to leave beer on pumpkin in fermenter

I have a pumpkin ale sitting in primary right now that I brewed on 9/17. The OG was 1.060 and I just took a hydro sample last night after 8 days and SG was 1.014, and actually tasted really good already. It was a partial mash and I used 60oz of canned pumpkin in the mash, and a lot of that...

    Opinions/Advice: Imperial India Black Ale

I planned on pellet hops. Will pellets still absorb that much of the fermentables? I was shooting for around 100 IBUs. Is there any way to hit that reasonably in a 3 gallon boil or would you recommend dropping that lower and using less hops? I've never done a big beer, a high IBU beer, or dry...

    Opinions/Advice: Imperial India Black Ale

I was thinking about the chocolate malt. I definitely want some dark malt flavor to it, not just an IIPA that happens to be black. I've never used the Carafa before and just couldn't find if Beersmith had a separate item for the dehusked type. The LHBS just calls it debittered black malt. Do...

    Opinions/Advice: Imperial India Black Ale

No idea about the style name, I just kind of crammed the two names together. I assume there is a better name for it, I just didn't know what. My boil volume is 3 to 3.5 gallons, but I'm going to top it off to 5 in the fermenter. I don't have the equipment, or space for a full boil yet.

    Opinions/Advice: Imperial India Black Ale

I've tried to combine some recipes to come up with an Imperial India Black ale. This is the first partial mash recipe that I have modified and wanted to get some opinions/advice on it. BeerSmith 2 Recipe Printout - http://www.beersmith.com Recipe: Imperial BS (Black Simcoe) Pale Ale Recipe...

    Witbier Turned Sour in Bottle

2 weeks in bottle and same story. Still really tart, but the flavor isn't any stronger than it was a week ago, just not any weaker either. Still fizzy with absolutely no head and no gushers or bottle bombs so I'm not as leery of infection as I was. Just not sure where I went wrong since it...

    Witbier Turned Sour in Bottle

It occurred to me today that it has been a long time since I've had an actual Belgian witbier so I picked up a pack of Hoegaarden on my way home from work. I guess I was expecting more Blue Moon flavor out of my beer, but it's definitely more Hoegaarden just with more tartness. Here's hoping...

    Witbier Turned Sour in Bottle

Thanks for the replies. I will just let it go for a couple weeks and see how it goes. If the flavor sticks around and doesn't get nasty, I'll still drink it. Till then, I guess I'll just have to drink some more craft beer and plan my next brew.

    Witbier Turned Sour in Bottle

I'm a long time lurker on this site, and not an absolute newbie to brewing, but still pretty new. I have done several 2.5 gallon batches with a friend starting out with a Mr. Beer kit and continuing to use the Mr. Beer fermenter with ingredients from a LHBS. I moved a few months ago and just...
