You could easily insulate the coffin box, just cut a big whole into the chest freezer and insulate the insides of the coffin box and your done. But, I don't see the need to do that extra labor and it would definetely do a lot more damage to the chest freezer and would make replacing the chest...

My Auber INS PID Controllers are only on/off. Maybe that have other models, but mine have a high and a low switch, but still only on/off as a function.
Example:
Temperature set to 150 degrees for mashing,
PID set to 150
PID LOW set to 148 "which wil turn my burner off at this temp...

For my RTD probes to function properly, the water in my mash and HLT must be recirculating. This is the quick disconnect bulkhead for the HLT with an diffuser hood on the line.
