Lost Coast Great White Clone help

I've also heard the Kaffir lime leaves can be used in place of Chamomile. Aside from that, as I understand it, the Great White (which i too, love btw) seems to be a standard Belgian Wit, with the addition of "humbolt herbs" I personally just made a wit with a little bit of chamomile thrown in...

    I think I may have made a mistake...Help?

I don't think you're in too much trouble, as I boiled zest with some pith for a full hour, and a large majority of the bitterness was gone by the end of a month in primary. You might have lost some of the coriander though.

    I think I may have made a mistake...Help?

unfortunately, some of the pith was added. Probably where all the bitterness came from.

    Citrus/ Fruit additions and "options"

I'm relatively new at this myself and quite interested in this. while I can't offer much in the way of Info, I can tell you what I've learned from a recent experience. Adding zest too early in the boil will kill off any hint of citrus. If you've also accidentally added any pith into the boil...

    I think I may have made a mistake...Help?

So just wanted to update anyone who was interested on what happened. It was pretty bitter when I checked it about 1.5 weeks ago (2 weeks into primary ferm). But when I bottled today (after 3.5 weeks) most of the bitterness seems to have gone away. There still is a little bit of bitterness...

    Citrus Wheat OG too low?

I have a feeling that might be it. My mixing this batch was a little slower than previous times. I have a feeling that also might be why my yeast (WLP380) is taking a little longer to really get going. Would opening the container back up and mixing thoroughly roughly 24 hours into fermentation...

    Citrus Wheat OG too low?

Hey everyone, so I just brewed a citrus wheat last night nd when I took the original gravity after diluting to 5 gallons it was about 1.027. Fermentables are: 6 lb Wheat LME 1 lb Wheat DME is it possible the low OG might be due to not mixing well and could this affect my...

    Orange Blossom Wheat Critique/Help?

I've considered the Orange Blossom honey, but I've heard that most of its qualities are lost during the boil etc. I'm looking for a really pronounced (yet not overpowering) blossom scent. And I'll definitely take that advice on the honey malt. Any recommendation as to how much it should be...

    Orange Blossom Wheat Critique/Help?

Hey everyone, this is my first attempt at a recipe and would greatly appreciate some Help and feedback. Orange blossoms have been in bloom lately near where I got to school and the scent has intoxicated me, and I decided I had to put that in a beer. Grains/Extract: 3.3 lbs Wheat Liquid...

    I think I may have made a mistake...Help?

thanks for the replies everyone. I was lead to believe Belgian wits didn't require secondary ferm. Would the time in the secondary serve to mellow out any bitterness that might have come from the orange? also if I find the orange flavor lacking after primary ferm, would orange pulp in the...
