    I wouldn't do it the day before. I make up my priming sugar the same way on bottling day. 1 cup of hot water isn't going affect 1 gallon of beer so go ahead and put the hot sugar water into your bottling bucket and rack the beer onto the priming sugar.

    With 1 gallon batches, you'll have to play with the ingredients for sure. I brewed a Blue Moon clone which I tried the other day. Not bad but a little too much orange zest than I would like...so back to the drawing broad. The beer is drinkable and at only 9 bottles I not drinking a lot of it...

    You may want to ask this in the bottling/kegging section because those guys know a lot about kegging. If i were to guess, I don't think it would do anything to the beer. You would have to use a lot of co2 to bleed off the o2 and to carb the beer. But I'll admit I'm not an expert by any means.

    If you have the patience, I'd wait at least another week. Let the yeast finish up their job. I've wanted 4 to 5 weeks before bottling and I have some of the cleanest, clearest beers. :rockin: Even though, I have a busy life so waiting is easy for me.:D

    It is a great book. I bought it when it first came out and I still refer to it now. I'm always amazed when I'll find some new information in it even though I used so many times...

    You can scale back...I rehydrate so i make up my water and place it on my food scale. Zero it and then sprinkle the yeast into the water until I get 3 to 4 grams. Or just add the whole pack, it won't hurt anything.

    +1 with divrguy. I find that fermentation is very active the first 3 days and then slowly tapers off. Give the yeast time to work and finish making beer. The toughest part is having patience.

    I used to take that many hydrometer readings and returned the sample back to the fermenter. I never thought it was a big deal until seeing information from home brew websites. With that in mind, I never really had any issues with returning the sample. Now, I really don't bother taking that many...

    Only thing I can add....make sure your digital scale has a grams settings. My hop additions are usually 2 to 4 grams each which is pretty light. I've owned a couple of kitchen scales and both had the gram units and they can be found at your big box stores.
